I know I promised some tasting notes, but I have been drowning in the Mediterranean (figuratively, due to my new course that just started today--ethnography of the Mediterranean). Once I start to float again I will get on that.&lt;br /&gt;&lt;br /&gt;Today I met wine writer &lt;a href="http://beckysolomon.blogspot.com/"&gt;Becky Solomon&lt;/a&gt; and she had recently tasted Amelia Oil. She described it as very grassy and green. I think that is quite typical of central Italian olive oils and is a good sign our oil is aging well (now about 10 months old). I think there is also a hint of pepper but the acidity is low so it stays on the front of the palate. Now I am getting excited. We had a great day and there is nothing we like more than sharing our olive oil. It is always great to see people's faces light up as they have a taste of oil with my mom's fresh baked focaccia. If you missed us, we will be at the market in Dundarave once more on July 28 (hopefully we will have some oil left).&lt;br /&gt;&lt;br /&gt;I can never totally suppress the inner anthropologist and I am always fascinated by people's reaction to olive oil and the way in which taste works. There are those people, particularly elder Canadians, who do not really like the taste of extra virgin olive oil. Many said "It taste too much like olives," or "it's too strong." I take all of these comments to be compliments. What I realise is that much of the olive oil sold in supermarkets has little flavour at all and there are those who rarely taste straight olive oil. People need to learn about the complexities and variety of olive oil. Education of taste is so important here. I am not saying that everyone is going to like our oil and I try to tell them that there are as many types of olive oils as there are taste buds. I am just happy people are open-minded enough to try new things, like it or not.&lt;br /&gt;&lt;br /&gt;We are selling out quickly of our latest shipment. First, I imagine the consumer is getting a raw deal. Usually cheap oil means that quality is compromised and what you think you are buying is not really what is in the bottle. Second, perhaps the producers are being forced to sell at a rate that is lower than their production cost. This sometimes happens when big olive oil companies get involved and monopolise international markets. I personally see this as the death of small-scale olive oil production in the Mediterranean.&lt;br /&gt;&lt;br /&gt;If you are buying very inexpensive olive oil, you should expect to get what you pay for, which is usually not much. I am aware that different types of cooking require different types of oil; however, there is really no way I would ever consume 'lampante' or 'olive oil' grade. In fact, many consider these grades of olive oil unfit for human consumption. When the Romans said "caveat emptor" I think they were talking about buying olive oil.  What can you do to ensure you are buying quality oil? First of all, read the label carefully and look for signs of fraud. Check that your oil is extra virgin (if that is what you are after), that it has a specific and identifiable origin and there should be a 'best by' date. Although these indications are a start they do not always ensure a high-quality product. I would even suggest checking on the Internet to find out more about the producer and distributor.&lt;br /&gt;&lt;br /&gt;That said, I do not think that good quality extra virgin olive oil should be available exclusively to the privileged. There is lots of over-priced olive oil out there on specialty food store shelves. When you buy a bottle of olive oil at the supermarket there is little indication on the bottle or the shelf of how the oil was produced or about who did all the work to turn olives into oil. Making olive oil is a year-long agricultural process that requires the attention of farmers, extra labour for harvesting and pruning as well as the people working in the mill.&lt;br /&gt;&lt;br /&gt;Although there are few issues around fair trade in Italy it is something that needs to be considered nonetheless. Are farms getting their fair share of the profits? This is particularly important for small-scale farmers who have a hard time competing in the global market. When my mother and I started to import olive oil from Italy we wanted to make sure we were giving back to local communities and encouraging the continuation of agricultural practices and traditions.&lt;br /&gt;&lt;br /&gt;Buying direct from the producer and selling direct to the client is one way in which we keep the cost of our oil reasonable. However, quality comes from careful labour, passion and expertise, which have their price. This cultivar is most common in Umbria, Tuscany, Le Marche and Abruzzo. It is usually cultivated together with the &lt;a href="http://ameliaoil.blogspot.com/2007/06/cultivars-frantoio-olives.html"&gt;frantoio&lt;/a&gt; cultivar. Moraiolo tends to have a grassier taste and balances the fruitiness of the frantoio olives. I personally think it is this olive that gives our oil its 'green' taste. It reminds me of lying down in long grass when I smell it. This has been a constant throughout my life. This summer I am teaching an ethnography of the Mediterranean course at &lt;a href="http://www.anth.ubc.ca/"&gt;UBC&lt;/a&gt; and as I prepare my syllabus I am looking at different ways I can work olives into my teaching. Olives as food, culture, landscape, a good for trade and barter and as a symbol of peace and discontent.&lt;br /&gt;&lt;br /&gt;While reading about the &lt;a href="http://www.med-voices.org/"&gt;Mediterranean Voices&lt;/a&gt; project, I came across this image. These are bottles of olive oil from the Cremisan monastery, whose land was divided by the Separation Wall. Olive trees in Palestine have been hard hit by conflict. In fact, these trees are particularly loaded symbols of not only peace but also ownership and settlement. To plant olive trees is to stake claim to land; olive trees are potent symbols of life, culture and a thriving community. This is an amazing place for anyone interested in the history, culture and future of food in the world. Besides teaching an anthropology of food course, I hope to indulge in a little formal learning of my own: I would like to become an olive oil sommelier.&lt;br /&gt;&lt;br /&gt;This is something I have been interested in for a few years. As far as I know, there are no courses offered in Canada (surprise, surprise). I looked into a few courses in Italy when I was still living in Umbria but had no idea which were above-board. The problem is there are two serious courses, as far as I can tell. There is a course offered by the &lt;a href="http://www.sommelier.it/default.asp"&gt;Italian Sommelier Association&lt;/a&gt; (AIS), whose main focus has traditionally been wine. The other course is offered by the &lt;span style="text-decoration: underline;"&gt;&lt;/span&gt;&lt;a href="http://www.oliveoil.org/eng/home.asp"&gt; The National Organisation of Olive Oil Tasters (ONAOO)&lt;/a&gt;, who only specialise in olive oil. Who knew it could be so complicated.&lt;br /&gt;&lt;br /&gt;I hope I can find a course that covers the history and culture of olives, as well as the science and art of tasting oil. I think it is interesting that not many olive oils mention what fruit from which plants goes into making oil. Mono-cultivar oils exist but they are quite rare. Most olive oils are made up of a mix of different olives. For example, Amelia Oil is composed of frantoio, leccino, rajo and moraiolo. This is what gives our oil complexity and balance.&lt;br /&gt;&lt;br /&gt;Usually the type of cultivar depends on the climate and geographic location of the &lt;span style="font-style: italic;"&gt;ulivetto&lt;/span&gt;. Typical Umbrian cultivars include: leccino, frantoio, dolce agogia, moraiaolo, rajo and San Felice.&lt;br /&gt;&lt;br /&gt;Frantoio (featured in the photo above) is one of the most common cultivars in all of Umbria. It is well suited to hills but adapts easily to different terrain. Frantoio olives give Umbrian oil much of its fruity taste. The olives are quite small but give a substantial yield of oil. Interestingly, all olives start off life green and end up black. The frantoio olives I picked in Amelia were usually just starting to change coulour.&lt;br /&gt;&lt;br /&gt;Over the next few weeks, I plan to write more about cultivars and olive trees. I know I've already written about this subject but I thought this article's findings were worth sharing. Essentially, what the author argues is that the &lt;span style="font-style: italic;"&gt;terroir&lt;/span&gt; taste of wine does not come from the actual minerals in the soil where vines are grown. Many wine tasting notes talk about minerality or a mineral flavour; however, this apparently does not come directly from the rocky soil. &lt;span style="font-style: italic;"&gt;Terroir&lt;/span&gt; can not be taken to literally mean earth in this sense.&lt;br /&gt;&lt;br /&gt;In my opinion&lt;span style="font-style: italic;"&gt; terroir&lt;/span&gt; is a complex relationship between land and culture. This is particularly well demonstrated by olive oil production: climate and soil determine what cultivars (varieties of olive trees) can grow in the area; unique agricultural techniques develop over time and become local traditions; cuisine is shaped around local products and growing seasons.&lt;br /&gt;&lt;br /&gt;When I pour some olive oil from Amelia on a piece of toasted bread I do taste the &lt;span style="font-style: italic;"&gt;colli Amerini&lt;/span&gt;. It is different than any other olive oil and is a reflection of each unique year. The course is called &lt;a style="font-style: italic;" href="http://www.turismoevino.com/index.php?option=com_content&amp;task=view&amp;amp;amp;id=1&amp;Itemid=2"&gt;Turismo del vino&lt;/a&gt; and it is being organised by CNIP Puglia to promote commercial relations and tourism between Italy and Canada in the area of food and wine cultural tourism.  The class is largely taught in Italian, with instructors  flown in from Italy, and the students are Italian citizens who are residents of Canada. At the end of the 800-hour course, they will fly to Puglia, Italy for a 100-hour practicum. Needless to say, I was intrigued and thrilled to participate for an evening.&lt;br /&gt;&lt;br /&gt;When I arrived, I was greeted by this week's out-spoken and lively instructor, Betty Mezzina. We tried to devise a plan for our lesson, but I could tell it was going to be a bit of Italian-Canadian improvisation. Betty, a wine and olive oil &lt;span style="font-style: italic;"&gt;sommelier&lt;/span&gt; from Puglia, went into the finer details of olive oil production and tasting techniques. I talked about my personal experience, the olive oil business and the complicated logistics of importing oil from Italy. I tried to stress the fact that it is all about human relations and building relationships with everyone involved in the process from production to customs brokering. I think Betty did a great job of stressing the diversity of taste and quality that can be found on the shelves.&lt;br /&gt;&lt;br /&gt;When we got down to tasting the oil, I was pleased that Amelia Oil was once again the favourite in a blind tasting. I hope that when you taste Amelia Oil you can imagine and taste the gentle green hills with their rocky soil, the gentle spring sunlight and the sound of cicadas on a hot summer day. Maybe I am exaggerating a bit but I do think oil and wine can tell the story of place, which includes history, culture and humanity. I guess that is the beauty of consuming something that is very much a product of the land and this is what my mother and I want to stay true to importing olive oil from a small producer in Italy.&lt;br /&gt;&lt;br /&gt;What got me thinking again about &lt;span style="font-style: italic;"&gt;terroir&lt;/span&gt; was a&lt;a href="http://moreisless.ca/"&gt; trip to Washington State and Oregon wine countries&lt;/a&gt;. It was interesting to taste wines from regions that are still finding their identity and getting in touch with their unique &lt;span style="font-style: italic;"&gt;terroir&lt;/span&gt;. Oregon Pinot Noirs, for example, are starting to have an identity all of their own that is strongly influenced by the red rocky soil of undulating green hills that can be found in much of the Dundee area. French wine makers have been drawn to the Oregon but they are making wines that are anything but French.&lt;br /&gt;&lt;br /&gt;I kept looking out for olive trees on my trip but I imagine the Washington and Oregon winters are just too cold for olive trees. There were a few bottles of California oil on shelves in stores but I did not have the opportunity to taste them. Of course, olives were some of the first crops planted by Spanish and then later Italian settlers in California. For these Mediterranean peoples the olive tree was an integral part of everyday life. In many parts of Italy olives, wheat and grapes were crops that were all grown on the same land. Due to the mechanisation of farming, it is quite rare to see this combination these days. This is a wonderful high, round cheese and egg bread. It is called a pizza but it has nothing to do with the Neapolitan kind and the pies we call pizza in North America. Pizza di Pasqua is a perfect compliment for the tasty salumi that are famous throughout Umbria. It is usually served as an &lt;span style="font-style: italic;"&gt;antipasto&lt;/span&gt; before the meal or I have taken it on numerous picnics that are part of the &lt;span style="font-style: italic;"&gt;Pasquetta&lt;/span&gt; tradition (literally little Easter--the day after Easter where Italians go out the countryside for a picnic). Easter is a major holiday in Italy and Pasquetta is one of the busiest days on Italian &lt;span style="font-style: italic;"&gt;autostrade&lt;/span&gt;, as urbanites attempt to breath a little country air and down a few more calories. Ironically, this is usually one of the rainiest days in Italy each year. When I lived in Amelia there was really no need to drive around much on &lt;span style="font-style: italic;"&gt;Pasquetta &lt;/span&gt;because the countryside was at my doorstep. I could eat my pizza di Pasqua in peace.&lt;br /&gt;&lt;br /&gt;I only attempted making this pizza once and I had a hand from my neighbour, Loretta, who taught me her family recipe. There was quite a bit of preparation involved and a good deal of nail biting as we hoped the dough would rise correctly and form a sensual dome in the oven. My first year in Amelia, I bought my pizza di Pasqua in the local &lt;span style="font-style: italic;"&gt;forno&lt;/span&gt; (there are no more communal ovens, but the bakery in Amelia still places the baker's mark on each loaf of bread in that tradition). In small town bakeries these pizza are very good but supermarket facsimiles are not to be trusted--you can never be sure of the quality of the ingredients.&lt;br /&gt;&lt;br /&gt;Pizza di Pasqua is a regional specialty that is popular in Umbria, Tuscany and Le Marche. You will not (or should not) find it in Milano or Bari. They have their own Easter traditions! I found a &lt;a href="http://italianfood.about.com/od/breadspizza/a/blr1161a.htm"&gt;recipe for pizza di Pasqua&lt;/a&gt; that is quite similar to the one I made. Make sure you use top quality ingredients: Italian &lt;a href="http://www.theworldwidegourmet.com/cheeses/italian/pecorino.htm"&gt;pecorino&lt;/a&gt;, free-range eggs and fresh&lt;a href="http://www.ameliaoil.com/"&gt; extra virgin olive oil&lt;/a&gt;. Enrico Polacco, an expert on Italian olive oil, commended us for promoting the origins of our oil and for understanding that the most important aspect to consider when purchasing olive oil is quality. Polacco vehemently chastised the Italian-Canadian community for focusing too much on price. However, he failed to mention our extremely accessible prices ($24.99/litre). We would like to prove that great quality and taste does not have to be exorbitantly priced.&lt;br /&gt;&lt;br /&gt;Shopping for genuine 'made in Italy' products is not always so easy, particularly when it comes to extra virgin olive oil. Slow Food Italy recently made a press release lamenting the fact that even most Italian consumers have no idea where the olives come from in their oil. As I mentioned in a &lt;a href="http://ameliaoil.blogspot.com/2006_12_01_archive.html"&gt;previous post, &lt;/a&gt;Italian olive oil can technically say made in Italy and the olives can be produced in Marocco, as long as the oil is blended and packaged in Italy. This is a big problem for small producers who pride themselves on the geographic specificity of their products.&lt;br /&gt;&lt;br /&gt;According to Coldiretti, one of Italy's major agricultural organisations, &lt;span class="testo_normale"&gt;the average Italian production of olive oil in the last 4 years was approx. 600 000 tonnes per year, worth 2 billion euros. The average Italian consumes between 13-14 kg of olive oil per year. Recently there has been an increase in olive oil consumption in Italy and in particular more high-quality and organic oil is being sold. &lt;a href="http://press.slowfood.com/press/eng/leggi.lasso?cod=3E6E345B080ef2736AIIM1983D14&amp;amp;ln=it"&gt;Slow Food has been working hard &lt;/a&gt;to encourage the EU to create legislation that requires producers and vendors to indicate the place of production of the olives that is used to make olive oil. I think fall and spring are my favourite times of the year in Italy; this is when everything comes alive. The summer is arid and plant life withers away in the heat and the winter is cold causing people, plants and animals to hibernate. Spring is when everything comes back to life. The grass in the olive groves looks young and tender and little flowers bloom in white drifts that punctuate the hillsides. This is the time of year when we would go out foraging for wild asparagus. Everyone in Amelia has their favourite spot that is a closely guarded secret. I remember coming home with fists full of twisty thin asparagus and making simple past sauces finished with a drizzle of olive oil and a shaving of &lt;span style="font-style: italic;"&gt;parmiggiano. &lt;/span&gt;Franca, my friends Walter and Mary's mother, made the best wild asparagus lasagna, which featured the lovely sausages they make in Amelia (my favourites were from the butcher's in the &lt;span style="font-style: italic;"&gt;centro storico&lt;/span&gt; on via della Repubblica).&lt;br /&gt;&lt;br /&gt;Olives are  harvested and pressed only once a year, but caring for and monitoring the trees is a job that continues all year. Spring is when buds appear on the olive trees and just after Easter they bloom. Olive flowers have a very delicate floral fragrance that some Amerini say they can smell in the air in April. Most olive trees are wind pollinated or hermaphroditic, so this is an important moment for olive production. If there is too much rain or hail, the flowers can be damaged and pollination is nearly impossible. In late spring, farmers cross their fingers and wait to see if the little 'buds' that will become olives start forming (hopefully in abundance).&lt;br /&gt;&lt;br /&gt;This is just one moment in the long and precarious life cycle of the olive. When I drizzle olive oil over my wild asparagus pasta, I can't help but think of all of the effort and &lt;span style="font-style: italic;"&gt;buona fortuna &lt;/span&gt;that goes into making such a wonderful product. I am crossing my fingers for fine weather and a light breeze over the green Umbrian hills this spring. However, it is probably the best way to eat extra virgin olive oil. &lt;a href="http://www.ameliaoil.com/"&gt;Amelia oil&lt;/a&gt; is perfect &lt;span style="font-style: italic;"&gt;crudo&lt;/span&gt; and can be used for finishing grilled meats and vegetables as well as drizzled on salads and breads. Think of it as a condiment that is applied to food after cooking to give it a little more flavour, just like salt or pepper. Best of all, if you eat your oil 'raw' you get the most health benefits and don't lose any of the flavour. Cooking tends to break down the chemical composition of oil, which is not necessarily a bad thing, but fresh oil does lose some of its punch and fruitiness in the process.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.ricksdryrub.com/"&gt;Rick&lt;/a&gt; at &lt;a href="http://www.meinhardt.com/"&gt;Meinhardt's&lt;/a&gt; feels there is no point in cooking with extra virgin olive oil because of this loss of flavour and olive oil's smoking point (410F). After years of living and cooking in Italy, I am more of the traditionalist school and cook everything using extra virgin. Butter, canola--what's that? I figure Italian cuisine is pretty tasty so why change the basics. I have never met an Italian who cooks with grape seed or canola oil. My neighbour in Amelia even made cookies and other baked goods using olive oil and no butter. The photo is also from this same site.&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(204, 102, 0);font-size:130%;" &gt;&lt;strong&gt;Olive Oil Cake with Rosemary and Lemon&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(204, 102, 0);"&gt;Basic cake recipe:&lt;br /&gt;&lt;/span&gt;1 ¼ c all-purpose flour&lt;br /&gt;¼ tsp baking powder&lt;br /&gt;¼ tsp baking soda&lt;br /&gt;¼ tsp salt&lt;br /&gt;2 eggs, at room temperature&lt;br /&gt;1 c sugar&lt;br /&gt;½ cup fruity extra-virgin olive oil&lt;br /&gt;¾ cup milk&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(204, 102, 0);"&gt;Additions:&lt;br /&gt;&lt;/span&gt;2-3 Tbsp chopped fresh rosemary&lt;br /&gt;The zest of 2 small lemons&lt;br /&gt;The juice of 1 small lemon&lt;br /&gt;1 cup grated Reggiano-Parmigiano&lt;br /&gt;Several cranks of freshly ground black pepper&lt;br /&gt;&lt;br /&gt;Preheat the oven to 350. Line a 10-inch loaf pan or 9-inch round pan with parchment paper.&lt;br /&gt;&lt;br /&gt;In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.&lt;br /&gt;&lt;br /&gt;In another medium bowl, whisk together the eggs and sugar until well blended, about 1 minute. Whisk in the olive oil and milk.&lt;br /&gt;&lt;br /&gt;Whisk the egg mixture into the flour mixture until thoroughly blended. Gently mix in the rosemary, lemon zest, lemon juice, black pepper, and Reggiano-Parmigiano.&lt;br /&gt;&lt;br /&gt;Pour the batter into the prepared pan and bake until the cake is firm and a toothpick inserted into the center comes out clean, about 40 minutes. We immediately recognised in each other a passion for olive oil, slow food and Italy. Silvia makes beautiful ceramic designs that are perfect for the table. Stayed tuned for future collaboration!&lt;br /&gt;&lt;br /&gt;I thought her dipping bowl, pictured above, would be perfect for serving the great olive oil 'dip' known as &lt;span style="font-style: italic;"&gt;pinzimonio&lt;/span&gt;. This is a little appetizer that comes from the Rome area, which simply consists of very good olive oil and a bit of salt. You slice fresh vegetables (carrots, celery and fennel, for example) and dip them in the oil. Some people like to add fresh cracked black pepper or garlic, but I like this simple version because it really lets you taste the olive oil. This offers a change from the usual dunking of bread in olive oil, which can be filling and hard on the waistline. I have pretty much stopped buying butter since olive oil came into my life. No problem. I reached for  my bottle of olive oil and poured liberally into the very dry looking potatoes. We added some milk, grated in a little &lt;span style="font-style: italic;"&gt;parmigiano&lt;/span&gt;, salt and a head of roasted garlic. Wow, I have to say the results were impressive. Our mashed potatoes were every bit as rich as the standard buttery variety and the flavour had just a hint of olive, which went very well with the slow braised short ribs we had as a main course.&lt;br /&gt;&lt;br /&gt;There are many recipes where you can substitute olive oil for butter. It is a delicious and healthy alternative. There are a few environmental factors you should take into consideration: mainly light and temperature. Amelia Oil is bottled and packaged in dark glass bottles and tins to protect it from the harmful effects of light, which speeds up the aging process. Excessive heat also has a similar effect. The best temperature for storing olive oil is 56F but room temperature is acceptable.&lt;br /&gt;&lt;br /&gt;A number of people have asked me about storing oil in the refrigerator. This will prolong the life of your oil but don't be surprised if it solidifies when it reaches 36F. This happens when the waxes in the oil crystallise. Once the oil is brought back up to temperature it will return to its liquid state.&lt;br /&gt;&lt;br /&gt;I would recommend enjoying your olive oil while it is fresh and full of wonderful flavour and anti-oxidants. Ideally your 2007 Amelia olive oil should be consumed within a calendar year but it will certainly keep for up to two years, although it will lose some of its flavour and colour as it ages. Store your tins or bottles in a cool dark cupboard and decant small quantities into a stainless steel container or glass bottle for everyday use. Save this combination for salad dressings. Restaurants started this culinary trend because they often use sub-standard olive oil that has no taste.&lt;br /&gt;&lt;br /&gt;Do it the Italian way: toast (over a fire, if you can) some good quality crusty bread, rub a clove of garlic lightly on the slices and drizzle some good extra virgin over it and perhaps sprinkle a little sea salt. No, it does not have to do with the olives' moral integrity, but it does take into consideration other virtues. What sets extra virgins apart from other types olive oil is mainly their low acidity (0.8% oleic acid or less). Amelia Oil was closer to 0.4% last year. Extra virgin olive oil is obtained from olives and it is not chemically altered in any way. Low acidity is what makes extra virgin olive oil so palatable and it should never taste greasy or bitter. Acidity this low can only be obtained from the first pressing of the olives. Yes, it is. However, this takes some &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;explaining&lt;/span&gt; because there is no organic &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;certification&lt;/span&gt; on the bottle. Francesco asked me if we wanted the organic certification and we had a long talk about it. For small farmers like the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2" onclick="BLOG_clickHandler(this)"&gt;Suatonis&lt;/span&gt;, this means a big expense and a lot of red tape. After a long discussion, we decided that getting the certification would only raise the price of the olive oil without bringing any additional value.&lt;br /&gt;&lt;br /&gt;Having worked with Francesco &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3" onclick="BLOG_clickHandler(this)"&gt;Suatoni&lt;/span&gt; for a number of years pressing olives at his mill, I knew he wasn't using pesticides and that his production and cultivation methods were as traditional and 'clean' as they get in Italy. In addition, Amelia is well above sea level and because of the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;altitude&lt;/span&gt; (400 m) the olive trees are less &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;susceptible&lt;/span&gt; to pests and disease.&lt;br /&gt;&lt;br /&gt;In Italy, there are many organic certification methods which can be costly and have questionable standards. There has been little effort to create a standardised system and these programmes tend to favour big &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6" onclick="BLOG_clickHandler(this)"&gt;agri&lt;/span&gt;-businesses, who can afford to invest in what turns out to be largely a marketing &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;gimmick&lt;/span&gt;. We will keep you posted about other events.&lt;br /&gt;&lt;br /&gt;Last week we received a preview taste of what is to come when Francesco and Mario sent us a sample of the new oil that is being pressed right now. It is amazing. There is nothing like the bright green colour and taste of freshly pressed oil. We cannot wait for our big shipment to arrive in February 2007. Make sure you order some soon!&lt;br /&gt;&lt;br /&gt;At the moment everyone in Amelia is busy harvesting the olives. I am sad to not be part of it this year. I used to love the soft sound of the olives as they bounce off the ladder and gently drop onto the nets laid out under the trees. The best part of all is taking your olives to the mill, waiting patiently for your turn and pacing as the olives go through the milling process. Finally, it all ends with a green jet of gold coming steadily out of a stainless steel spout. Bread is toasted over the fire in preparation for tasting the first oil. All the hopes of a year of hard work are held in that moment. Satisfaction comes in the smiles on people's faces as they crunch their toast that is drips with oil.&lt;br /&gt;&lt;br /&gt;This year I am there in spirit and pacing the floor here in Vancouver.&lt;br /&gt;&lt;br /&gt;Here is a fun link that Julie found to a slideshow of the &lt;a href="http://www.guardian.co.uk/slideshow/page/0,,1950936,00.html"&gt;olive harvest in Calabria, Italy &lt;/a&gt;(in the South). We wanted to get some more oil before the end of the year so people could try it, see how good it is and order lots of 2007 oil. My mother had been going throughout the summer and this was our last time. There was a lot of interest in our oil and a number of people made deposits for the new oil that will be arriving in February. &lt;/p&gt;&lt;p&gt;&lt;br /&gt;It was a shame we are sold out of this year's olive oil because there were a lot of people who wanted to buy some. Luckily we have a shipment of 500 ml bottles arriving in October. The harvesting and pressing of the olives in Amelia will take place in November and December. We will receive our shipment in Vancouver in early February 2007. Our idea is to have people order their year's supply of oil and put a deposit down on their order now; this not how shopping in North America usually works. It is hard to get people here to think about buying a year's supply of anything! People are used to getting their olive oil at the supermarket when they run out of the little bottle they have. In Italy, people buy a year's supply because they know that olive oil is a product that is seasonal and only available fresh once a year.  They also understand it should be consumed within a year. If you want the good stuff, you have to learn to plan ahead. Our challenge is to change Canadians' eating habits and shopping practices. This is not an easy task and might not happen right away, but I am convinced that once people start using our oil they will start to understand. Many customers have told me they have no idea how much oil they use in a year. I keep saying that it is more than you think. When you use good oil, you want to drizzle it on everything. I have pretty much stopped using butter and have gone to extremes such as putting olive oil on my toast in the morning. Another aspect to consider is that olive oil is good for you, so don't hold back. The oil in Umbria is green and spicy and perfect for salads, grilled meat and bruschette.&lt;br /&gt;Before leaving, I decided to buy a huge stainless steal drum and 60 litres of olive oil from my friend Francesco at the olive mill down the road. I had helped harvest the olives and I wanted to take my bit of Umbria home with me to share with my friends and family. I knew no one at home had probably had the pleasure of tasting fresh pressed olive oil. In fact, when I got back to Vancouver I realised most of the fancy olive oil I saw in stores was being sold past its prime and at hefty prices.&lt;br /&gt;After tasting my olive oil, friends started to ask me if they could buy some. This is when my mother and I got the idea of importing olive oil from the town of Amelia where I had lived for the last two years.
